Masala Kraft is a new dining philosophy devised by head chef Hemant Oberoi. The system is a combination of Masala techniques in cooking complemented perfectly with an authentic craft of dining rituals. The traditions of Masala cooking lie with the use of blended spices, expertly selected for aroma and taste and ground in a paste with onions, ginger or garlic. Within the northern states of India in particular, Masala is incorporated into a wide selection of Indian dishes.

While traditionally Masala is added as a seasoning to enhance aroma and flavour, within Masala Kraft its use is elevated to an art form around which the dish is created. Thick sauces of butter, cream or gravy which would ordinarily smother the effects of Masala are avoided in favour of extra virgin olive oils and through a studious process of research and experimentation the exacting preparation techniques are implemented to bring out the full flavour and aromas of the Masala spices.
While the healthier aspects of this pioneering culinary exploration are obvious it is the aromas and tastes which measure its undoubted success. There is a selection of signature dishes on offer in Masala Kraft which employ this modern Masala cooking. These include Langarwali Dal, a mixed lentil speciality, and Atta Chicken, a contemporary version of the traditional tribal dish from the Punjab region of India. The perfect accompaniment to any dish is hot Phulka breads, chosen from the Phulka trolley. That well established aspect of Mumbai life and culture, Dabbawalah Tiffin delivery, is celebrated too in both vegetarian and non vegetarian Tiffin options.
Masala Kraft is located in the lobby of the hotel and benefits from a truly incredible and luxurious environment, perfectly suited for the ritual aspect of the dining experience which begins with hand washing in brass receptacles. Opening hours for Masala Kraft are from 12.30am to 2.45pm for lunches, and from 7.00pm till 11.45pm for dinner.
